This cheese belongs to the exclusive circle of our cheeses that bear names that come from the names of mountain peaks in our region. Koziniec, similarly to e.g. Śmielec, Niedźwiednik, Koziarki or Krowiniec (with which Koziniec makes a good pair) can be both eaten and conquered (if you’re fond of mountain trekking).
It’s a rather delicate cheese, of pleasant taste and consistency that allows it to be cut in slices. To some people it may remind Dutch gouda.
